A throw together, six ingredient, one-tray gnocchi baked starring our very own Home Base. Use this recipe as a base and make it your own – grated zucchini, sausage, ricotta, salumi, pesto, you name it! Tonight it’s @salumiaustralia ‘nduja and some frozen spinach. Now that folks is what I call a home base! ⚾️
Serves 4
Pre-heat oven to 200C (180FF). In an oven proof dish, add your store-bought gnocchi (no need to par-boil here, just throw it in. I used 500g). A jar of SNP pasta sauce. Half fill jar with water, give it a shake, then pour that in too. Stir. Nestle in ‘nduja to your liking and defrosted (and squeezed out) spinach. Cover with mozzarella and let it rain down with Parmigiano Reggiano. A final drizzle of olive oil just to say I love you. Into the oven for 30 mins or until bubbling, golden and irresistible. Leave to stand for 5 minutes before digging in (she’s hot!).
