Throw-Together Zucchini & Tuna Pasta (Kid Approved!)

If you asked my kids if they like tuna, they’d say no. But, tuna tossed through a jar of Home Base? They gobble it up.

I grate in some zucchini for greens, and it has become one of those throw-together dinners we all enjoy - big and small.

Serves: 4

  • INGREDIENTS

    1 tablespoon olive oil
    1 zucchini, grated
    1 x 500ml jar SNP Home Base pasta sauce
    200g jar of tuna in olive oil, drained
    375g SNP pasta
    Zest of 1 lemon, optional
    Cheese to serve

  • METHOD

    Bring a large saucepan of water to a lively boil and season as salty as the sea. Add SNP pasta and cook until al dente.

    Heat a fry pan over medium heat. Add olive oil and the grated zucchini. Cook for 1 minute, tossing, until it starts to soften and colour. Pour in the sauce, stir, and bring to a gentle simmer for 2 minutes. Add drained tuna, toss through sauce, and turn off heat.

    Add the cooked pasta along with a splash of pasta water. Give it a good stir to coat. If using, zest over lemon.

    Add cheese if your kids like it (mine do) and stir in. Finish with a final shower of grated cheese on top.
