Some Like it Hot with Crispy, Honey Salami

The heat of the sauce, the sweetness of honey, and those crisp salami curls — it’s a pasta worth staying in for.

Serves: 2

  • INGREDIENTS

    1 tablespoon olive oil80g salami, thinly sliced
    1 teaspoon honey
    ½ jar SNP Some Like It Hot pasta sauce
    20g butter, optional
    Parmigiano Reggiano/parmesan
    200g pasta

  • METHOD

    Place a frying pan over medium heat and add olive oil. Once hot, throw in the salami and fry for a few minutes until the edges start to curl and crisp. Drizzle over about ½ teaspoon of honey and toss to coat the salami in its sticky glaze. Scoop the salami out and set aside on a plate, leaving the rendered fat in the pan.

    Meanwhile, bring a large pot of water to a rolling boil. Salt generously, then cook your pasta until molto al dente — you want it slightly under so it can finish in the sauce. Reserve about ½ cup of pasta water, then drain.

    Carefully pour a jar of SNP Some Like It Hot into the pan and bring to a simmer. Once bubbling, if using, stir in the knob of butter. Add the drained pasta directly into the sauce and stir forcefully, adding a splash of the reserved pasta water and a small handful of parmesan. Stir until the sauce becomes silky and clings to the pasta.

    Fold through half the crispy salami, divide between two bowls, and top with the rest. Finish with extra cheese and serve immediately.
