DIRTY MARTINI PASTA SAUCE (500g)
Bold, Zesty, Briny

Uniquely crafted and original, this is our show-stopper sauce that is unlike anything on the shelves. A rich, flavour packed pasta sauce starring local Australian Talent - summer ripe, Roma Tomatoes, Archie Rose Native Botanical Vodka and Toolunka Estate Naturally Fermented Olive Brine. This sauce delivers a briny and zesty punch reminiscent of a classic dirty martini, Aussie style

HOME BASE PASTA SAUCE 500g
Summer Tomato and Basil

Tomato and basil, it works. They belong together, they're home. This is our base for all kinds of sauces. Home Base Sauce is a rich and smooth, slow-cooked tomato and basil sauce made and bottled in the height of summer, when the local Australian tomatoes are bursting with flavour, and the basil most fragrant. It's ready to enjoy on its own tossed through hot pasta, or prime to be elevated by adding further ingredients to create a sauce that's completely new.

RED, RED WINE PASTA SAUCE (500g)
Smokey, Robust, Full-Bodied

Don’t make me sing it! Red, Red wine is a full-bodied, velvety red wine sauce infused with the robust flavours of roasted peppers, smoked garlic, and tomatoes. Featuring Fiasco, a shiraz from the Adelaide Hills made with Sangiovese and Nebbiolo grapes, Fiasco boasts deep, juicy undertones, making it a perfect pair for the rich flavours of Australian iron bark-smoked garlic, sweet local roasted red peppers and Roma tomatoes. Elevate your Bolognese, slow-cooked ragus, or just like Neil Diamond sang, savour it on its own to sooth all your woes.

TROTTOLONI DRIED PASTA
In Italian, Trottoloni translates to “spinning tops”.  This is a
 short, twirly pasta built to catch sauce in all its twists and curves. 

PIPETTE DRIED PASTA
In Italian, Pipette translates to “little pipes”. It is a short, rounded, ridge pasta built to capture the sauce in all its curves and crevices.

SATURDAY NIGHT PASTA
Made from Australian, durum wheat semolina from the “Golden Triangle” area of NSW for Saturday Night Pasta.

This pasta is slowly extruded through bronze dies and gently air dried at low temperature for 48hrs, to preserve the nutritional benefits, the best taste and digestibility.

Ingredients

Australian Roma tomatoes (76%), extra virgin olive oil, onion, garlic, sugar, chilli, basil, rosemary, lemon, Toolunka Estate naturally fermented olive brine (2%), Archie Rose Vodka (1%), lemon myrtle leaves.

No preservatives added.

Due to the cooking process, the alcohol is almost cooked out, leaving the botanicals to flavour the sauce.

SERVING SUGGESTION
Simply bring your bottle of sauce to a gentle simmer, toss through hot, al dente pasta along with 100ml of cream, a generous splash of pasta cooking water, a knob of butter, and a shower of Parmigiano Reggiano. Give a forceful stir and watch it transform into a deliciously silky sauce.
